The 3000 is 16 bit not 12, the 60 was the only 12 bit MPC.
The 5000 is kind of a rehoused Alesis Fusion rather than a ground-up designed MPC. When it was first released it had severe OS problems and got a really bad reputation which it never recovered from. It can do a whole lot of stuff and you should be able to find them cheaper than a 2500, with the 2.0 OS all the initial problems seem to be fixed so it could be worth looking into.
You seem a little confused about the numbering system used in the MPCs names, it's not like you're buying MPCs by the pound. The conventions changed throughout the lifetime of the MPCs, so much that they don't really mean anything any more. It's more about what the marketing department thinks the pricepoint of whatever new model they're naming should be, for example the 1000 is much more capable than the 2000 or 2000XL.
